Inspector Notes: Observed employee drinking in the server prep area from a reusable tumbler and not a single use cup with lid and straw. Observed an employee personal drink stored on the clean dish shelving above the 3 compartment sink and on a food prep counter. CA: Employee personal drinks shall be in a single-use cup with lid and straw and stored/handled to prevent contamination. COS: PIC relocated cups.

Inspector Notes: Observed carton of strawberries and raspberries that had white, fuzzy mold-like growth. CA: Food shall be safe, unadulterated and honestly presented. COS: PIC discarded cartons of berries and the shelf they were stored on will be sanitized since the berries had leaked.

Inspector Notes: Observed raw bacon stored above hot dogs and raw ground beef stored above raw pork chops. CA: Raw animal foods shall be stored separately from ready-to-eat/fully cooked foods and based on their minimum internal cook temps. COS: PIC rearranged foods so they were stored separately based on their cook temps.

Inspector Notes: Observed foods requiring date marking that were held past their 7 day expiration (jalapeno lime crema prepped 8/1, sliced cheese opened 7/31, cooked chorizo 8/3, horsey sauce 7/25, queso 7/30, sauteed onions 8/2, milk unknown when it was opened, chili 8/1). CA: Foods requiring date marking shall be discarded if not used within 7 days. COS: PIC discarded foods.

Inspector Notes: Observed several boxes of food and large bag of onions stored directly on the floor in the dry storage room, and several packages of food stored directly on the floor in the walk-in cooler. CA: Food shall be stored in a clean, dry location at least 6″ of the ground. COS: PIC moved food in dry storage and will move the food off the floor in the walk-in freezer.

Inspector Notes: Observed live flying insects in the kitchen landing on food and numerous live crawling insects in the dishwashing area. CA: The presence of insects and pests shall be controlled to minimize their presence.

Additional remarks:
Discussed with PIC:

-Facility must immediately discontinue using their vacuum sealer. Submit proposed procedure to health dept for review. All food onsite that has been vacuumed sealed must be used or discarded within 24 hours

-Outdoor cooking requirements (smoker must be in an enclosure. Submit plans to health dept)

-Buffet requirements: sneeze guard. Signage. Monitor use

-No sanitizer connected to the chemical sanitizing dish machine nor is there a replacement available in the facility. 3 comp sink must be used for sanitizing

-Chemical storage

-Clean dish machine

-Update menu to include consumer advisory

-Allergen statement

-Submit procedure for par-cooked wings

-Employee health policies

-Scoop storage

-Label spices and sauces/oils

-display permit and CFSM cert
