Additional remarks:
Sliced tomatoes and sliced cheese are kept in prep top cooler that is often open for periods of time, which is why the temperature was higher than the required 41 degrees. A lollipop thermometer was left in the top of the prep top to check the ambient temperature and it was 38 degrees.
