Inspector Notes: Observed TCS food reading above 41F on countertop (mayonnaise=62F , tartar sauce (made-in house)=60F). CA: Cold TCS food shall be maintained at 41F or below. COS: Mayonnaise and tartar sauce were placed on countertop last night. Food items were discarded since they were held over 4 hours.

Inspector Notes: Observed sanitizer bucket stored on clean dish shelving over clean pans at base of operation. CA: Poisonous or toxic materials shall be stored Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles. COS: No contamination was observed. Sanitizer bucket was moved from clean dish storage shelving and placed in separate area with chemicals only.
