Inspector Notes: Observed floors in entire kitchen under all equipment in need of cleaning. Coated with grease and old food. Observed floors in walk-in freezer in need of cleaning. CA: Floors shall be cleaned under equipment and in walk-in freezer as needed to prevent the buildup of trash, grease and food.
Additional remarks:
1. If doing partial cooking of raw chicken wings, need to create a written plan and submit to Health Authority for approval. Refer to pages 77-78 in the rules under ‘Non Continuous Cooking of Raw Animal Food.’ Advised to submit to the State office for approval since procedure is conducted statewide. Discontinue procedure until receive approval.
2. Do not store covers for fryers on floor. Find alternate location off the floor.
3. Do not store dishes wet; shall air dry then store.
4. Clean wall in wing sauce area.
Due to the failure of this routine inspection, a re-inspection shall be conducted within 10 days. A re-inspection fee of $250.00 will be due at this time.
