Inspector Notes: Observed personal drinks in kitchen (prep area) not in single service cup with a lid and a straw. CA: All personal drinks must be stored in a single service container with a lid and a straw and stored in an area away from food and equipment. COS: Drinks were discarded.

Inspector Notes: Observed TCS foods reading above 41F in the prep-top cooler across the grill (chicken salad=48F, diced ham=45F, sliced turkey deli=45F, sliced cucumbers=52F, mayonnaise=55F, ambient temp=50F). CA: Cold TCS foods shall be maintained at 41F or below. COS: Per discussion with PIC food items mentioned above were placed in prep-top coolers about 30 minutes ago. TCS food items previously mentioned were taken to walk-in freezer to rapidly cool to 41F.

Inspector Notes: Observed cooked rice in walk-in cooler reading 50F. Cook date of rice per label on container stated 11/5 and inspection performed on 11/6. CA: Cooked TCS food shall be cooled within 2 hours from 135F to 70F and within a total of 6 hours from 135F to 41F or less. COS: Rice was discarded.

Inspector Notes: Observed partially cooked potatoes stored on prep table next to the fryer using TPHC but with no time indicating when the potatoes were removed from cold holding or when they need to be discarded. CA: If time without temperature control is used as the public health control up to a maximum of 4 hours: the foods shall have an initial temperature of 41F and will be marked to indicate the time that is 4 hours past the point it was removed from temperature control. COS: The potatoes were discarded.

COS: Items mentioned above were taken to warewashing area to be properly cleaned.
