Cancun Mexican Grill receives a 71% on their recent health inspection

Cancun Mexican Grill, located at 4403 Towne Lake Pkwy Ste 200, received a score of 71 points out of a possible 100 points during their 05/31/2022 inspection by the Georgia Department of Public Health.

The violations noted by the inspector were:

Violation of Code: [511-6-1.04(4)(c)1(iv)]
Observed food being left uncovered throughout entire kitchen area (i.e prep tops, steam table, food on stove, and food cooling in back). There were many insects flying around in the back kitchen area where food was cooling. All food must be kept covered while not in use to prevent overhead contamination. COS by covering. Corrected On-Site. Repeat Violation.

Violation of Code: [511-6-1.05(7)(a)1]
Observed heavy build-up on blade of can opener. Can opener must be cleaned after each use. New Violation.

Violation of Code: [511-6-1.04(6)(f)]
Observed salsa being improperly cooled on ice bath due to lack of ice/water. Salsa was 50°F. Time/temperature control for safety (TCS) foods must be cold held at 41°F or below. The person in charge must ensure that employees are making effective ice baths. Health Authority recommends not using large pans of salsa on ice because the product on the bottom will be in temperature while the product on the top is not. COS by adding ice. Corrected On-Site. Repeat Violation.

Violation of Code: [511-6-1.04(6)(f)]
Observed pork being hot held on stove (stove not on) at temperatures less than 135°F. Also observed queso cheese left sitting out on counter at 120°F. Pork was 106°F. Except during preparation, cooking, or cooling, or when time is used as the public health control, TCS must be hot held at 135°F or higher. COS by reheating pork and discarding cheese (could not determine how long cheese was left outside of temperature control). Corrected On-Site. Repeat Violation.

Violation of Code: [511-6-1.04(6)(e)]
Observed queso being cooled on ice baths with very little ice and water. PIC must ensure that there is a sufficient amount of ice and water to properly cool food (ice water should come to the highest level of food in the container). Also, employees are not stirring products, which is essential rapid cooling. Lastly, ice wands used to cool soup were melted. PIC must ensure that ice wands are being replaced once melted.

Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:

Placing the food in shallow pans; Separating the food into smaller or thinner portions; Using rapid cooling equipment; Stirring the food in a container placed in an ice water bath; Using containers that facilitate heat transfer; Adding ice as an ingredient; or Other effective methods. COS by adding more ice and water to ice bath, stirring food, and replacing ice wand. Corrected On-Site. Repeat Violation.

Violation of Code: [511-6-1.03(5)(i)] Observed employees preparing food without wearing a hair restraint. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS by putting on hat. Corrected On-Site. Repeat Violation.

Violation of Code: [511-6-1.07(4)(b)]
Observed uncovered drink stored on prep top unit. Personal items must be stored in a designated area separate from customer food. COS by moving. Corrected On-Site. New Violation.

Violation of Code: [511-6-1.07(5)(k)]
Observed several flying insects in back kitchen area where uncovered food was cooling. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by:
Routinely inspecting incoming shipments of food and supplies; Routinely inspecting the premises for evidence of pests; Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; and Eliminating harborage conditions.
