Inspector Notes: Observed ceviche stored on the top of the prep cooler (not in the openings but on top of other containers) that were not 41°F or below. [SEE TEMPERATRUE OBSERVATIONS]. The ambient of the cooler was recorded at 41°F. Corrected on site by discarding.
