Observed certified food safety handler certification, will need to obtain certified food safety manager certification. Repeat Violation.

Observed no paper towels at handwash sink in bathrooms or in kitchen. PIC placed napkins there until the delivery of paper towels comes in. Corrected On-Site. New Violation.
Violation of Code: [511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii)]
Observed raw chicken, steak, bacon, and chorizo over ready to eat items. Observed raw chorizo and raw bacon beside cooked pork. PIC moved items to correct location. Corrected On-Site. Repeat Violation.
Violation of Code: [511-6-1.05(6)(n)]
Observed no sanitizer made up to wipe down counter tops. PIC made sanitizer but it was above the maximum of 400ppm. PIC remade it to the correct concentration. Corrected On-Site. New Violation.
