Grandmom’s Diner in Savannah receives a 71% on their recent health inspection

Grandmom’s Diner, located at 2108 Waters Avenue in Savannah, received a score of 71 points out of a possible 100 points during their 01/18/2023 inspection by the Georgia Department of Public Health.

The violations noted by the inspector were:

Violation #1
1-2B – certified food protection manager

Repeat: Yes
Inspector Notes: Observed facility did not have a certified food safety manager. RCA: Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection.

Inspector Notes: Observed raw chicken stored next to a head of lettuce. Observed raw shrimp stored above head of lettuce. COS CA: PIC rearranged food items to separate foods properly. Food shall be protected from cross contamination by, separating raw animal foods during storage, preparation, holding, and display from: Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, and Cooked ready-to-eat food.

Inspector Notes: Observed no items in coolers using date labeling. RCA: Food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1.

Inspector Notes: Observed no cold-holding units with internal thermometers. RCA: PIC shall obtain internal thermometers. Cold-holding units shall be equipped with at least one integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device’s temperature display and kept in the warmest area of the unit.

Inspector Notes: Observed two reach-in coolers with ambient air temperatures above 41F (55F, 46F). RCA: PIC is not to store any TCS foods into cold-holding units until repaired or replaced. Equipment shall be maintained in a state of repair.

Inspector Notes: Observed facility did not have testing method available for chlorine sanitizer. RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided and shall be matched correctly to the type of sanitizer in usage.

Inspector Notes: Observed buildup of food, grease, and debris on fryers, sink, and refrigeration units. Observed buildup of food and other debris on non-food contact surfaces of cooking equipment and outside of refrigeration units. RCA: Regularly clean nonfood-contact surfaces of equipment so that they be kept free of an accumulation of dust, dirt, food residue, and other debris.

Inspector Notes: Observed food debris and accumulations on floors and walls. RCA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Remarks
No food was cooking during inspection.
Spoke with PIC about using BBQ smoker outside and the need for a permanent enclosure if wanting to use smoker. PIC stated he will not use smoker anymore, did not observe PIC using smoker during inspection.
