Observed employee leave private office and immediately prepare plates without washing hands in between. Advised PIC any time task are changed or called away from food prep area, hands shall be washed prior to handling food. New Violation.
Violation of Code: [511-6-1.07(3)(b)]
Observed no paper towel available at hand sink in bathroom. Advised PIC each hand washing sink shall be stocked with a drying provision. New Violation.
Violation of Code: [511-6-1.05(7)(a)1]
Observed cutting boards with deep groves and heavily soiled, also observed microwave with excessive debris and mixing bowls with old food debris. Advised PIC to replace cutting boards and to clean bowls and microwave to sight and touch. New Violation.
Violation of Code: [511-6-1.04(6)(f)]
Observed raw chicken by stove, 2% milk and raw shell egg in RIC being held above 41F in the temp danger zone. Advised PIC to turn cooler temp down and to not hold items at room temp. COS- PIC moved raw chicken to RIC. Corrected On-Site. New Violation.
Violation of Code: [511-6-1.04(6)(c)]
Observed oxtails thawing at room temp in large plastic bag. Advised PIC of proper thawing methods. COS- PIC relocated oxtails to RIC. New Violation.
