Inspector Notes: Observed ice bin in main kitchen and bulk ice bin not cleaned at a frequency to maintain food contact surfaces clean to sight and touch. CA: PIC will have ice bins detailed clean by correct by date indicated.

6-1A – proper cold holding temperatures

Repeat: Yes
Inspector Notes: Observed several TCS foods in reach in cooler and walk in cooler holding at a temperature greater than 41 degrees Fahrenheit. PIC indicated that all foods found not at temperature had been in cooling units greater than 4 hours and discarded.

Educational remarks:
-Discussed all damp wiping cloths must be held in sanitizer in between use.
-Discussed employee drink policy, only using single service cups with lids and straws stored to ensure no possible contamination may occur.
-Discussed single use containers must not be reused to store prepared foods.
-Discussed cooling methods
-Discussed proper dispensing of single service items to prevent possible contamination to food contact surface.
Facility voluntarily closed due to cooling unit problems and lack of capacity for cold holding.
All foods cooling are on track to cool and reach 41 degrees Fahrenheit before allotted time.
