Staff let Inspector know they use wiping cloths with QUAT spray sanitizer for cleaning. COS staff educated on proper food and nonfood contact surface sanitization process with wiping cloth and sanitizer bucket OR sanitizer spray bottles and disposable towels. Wiping cloths discarded into dirty linen bin. Facility had sanitizer buckets and distributed them with fresh cloths.

Inspector Notes: Observed mold like debris on multiple ceiling tiles above the prep area, in the dishpit, and near the pizza oven. Observed food and physical debris on the cutting edge of the can opener, bottom shelves within the lower prep top coolers, and overheard wires for equipment around pizza oven. These surfaces must be cleaned and sanitized as often as necessary to prevent debris accumulation in order to prevent contamination of food items, in use utensils, single use items, and employees’ hands. Staff reported that district manager has been made aware of mold-like debris on ceiling.

Inspector Notes: Observed multiple flies in the dish pit and general kitchen area. Observed a smell coming from the open drain in the dish pit area and observed flies gathered at the drain opening as well. Pest control must be done as often as necessary to prevent the presence of pests such as flies. Observed the back door not to be self closing. Exterior doors must be self closing to prevent pest incursion.
