Inspector Notes: Observed the facility was attempting to cool items, however, the temperatures are not lowering quickly enough; cooked chicken went from 123 F to 107 F after 1 hour. Based on predictive cooling, these items should cool an average of ~32.5 F an hour. COS. Items were reheated and cooling restarted. CA: Cooling shall be done to ensure that items go from 135 F to 70 F within 2 hours and from 70 F to 41 F within another 4 hours.
