Temperature control for safety (TCS) foods shall be maintained at the required hot (135F or above) or cold (41F or below) holding temperatures.

Additional remarks:
Addressed complaint regarding incident with alleged insect found in chicken broccoli from buffet line. PIC acknowledged insect presence and stated raw produce may have been the cause. Proceeded to inspect all prepped cut broccoli in walk-in-cooler and found no presence of insects. Also inspected chicken broccoli, Malaysian chicken, roasted pork with vegetables present on buffet line during inspection. No other prepared dishes containing broccoli in facility.
Consulted with PIC:
– Addition of handwashing station in main kitchen.
– Addition of vegetable prep sink in main kitchen.
– Updated GA Food Rules and Regulations.
– Provided PIC employee health policies in Spanish and Chinese.
– Provided employee education on allergies, sanitizer, and storage practices.
