Waffle House, located at 2644 Riverside Drive in Macon, received a score of 79 points out of a possible 100 points during their 03/23/2023 inspection by the Georgia Department of Public Health.

6-1A – proper cold holding temperatures

Inspector Notes: EHS observed 3 cases of hash browns with temperatures raging from 44-45 degrees Fahrenheit. EHS also observed 3 small packets of Half half with temperatures ranging from 43-45. EHS also observed one container of chili with a temperature of 44 degrees Fahrenheit. PIC informed EHS that all those items temped were held overnight. EHS took ambient air and it read at 50 degrees Fahrenheit. (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above. P Informed PIC that all items temped were elevated and due to it being held overnight it has to be tossed. This was COS by tossing foods and other TCS foods that were temped were 41 and below were moved to other RICs. All other food was non TCS.

Inspector Notes: EHS observed RIC near coffee machine and RIC not holding adequate temperatures. (3) Numbers and Capacities. (a) Cooling, Heating, and Holding Capacities. Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified under DPH Rule 511-6-1-.04. Pf Informed PIC to have RIC serviced and regional manager contacted maintenance man. This must be corrected by 3/30/23

Inspector Notes: EHS observed two male employees without beard restraints. i) Hair Restraints. 1. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. 2. This does not apply to employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food, clean utensils and linens and unwrapped single-service and single-use articles. Informed PIC that any hair longer than inch must be restrained. This was COS.
