Inspector Notes: Observed severe build up of mold like substance on the internal sides of the ice machine at the time of this inspection. COS: PIC stated machine would not be operated until rinse, washed, and sanitized and ice was remade. CA: increase cleaning frequency to prevent build up.

6-1A – proper cold holding temperatures
511-6-1.04(6)(f) – time/temperature control for safety; cold holding (p)

Inspector Notes: Observed facility using a travel trainer with an AC unit as a cold hold unit storing cream cheese above 41F and an ambient cooler of water at the temperature of 45F. COS: PIC stated the food would not be sed and owner would discard TCS food items in the trailer unit. CA: Ensure that TCS items are stored at 41F or less. **Equipment specs of the trailer must be submitted to Glynn EH office before continued use of it to ensure it is an approved equipment piece.

Additional remarks:
Facility is baking on site. Risk type will be adjusted to reflect the operational changes.
