Inspector Notes: Several flats of raw shelled eggs were stored directly above and next to various ready-to-eat cheeses and meats stored within the single door reach in cooler. The operator reorganized the cooler to ensure proper storage. A open log of raw beef was stored directly above an open bag of ready-to eat cheese. The cheese was discarded. An open 5-gallon bucket of marinated raw chicken was stored directly next to lettuce intended for sandwiches stored within the 2-door reach in cooler. The inspector noted the one head of lettuce was wet and sitting in marinate that had pooled at the base of the cooler. The aforementioned head of lettuce was discarded and the cooler was reorganized to prevent contamination.

Inspector Notes: A bag of tortillas stored within the dry storage was left open exposing the tortillas to contaminations. A bag of bread stored on the rear prep table was torn open exposing the bread to contamination. Various ready-to-eat food items stored within the prep cooler were left uncovered and exposed to contamination. A container of raw chicken was stored uncovered in the 2-door reach-in cooler. All aforementioned items were discarded or adequately covered by the operator.
