Church’s Texas Chicken in Pooler receives a 65% on their recent health inspection

Church’s Texas Chicken, located at 101 Tanger Outlets Blvd in Pooler, received a score of 65 points out of a possible 100 points during their 02/27/2024 inspection by the Georgia Department of Public Health.

The violations noted by the inspector were:

Violation #1:
1-2A – pic present, demonstrates knowledge, performs duties

Inspector Notes: Violation due to multiple critical violations (2-1B, 2-2B, 2-2D). CA: PIC will properly train employees on food safety as it relates to their job responsibilities. PIC will monitor proper eating and drinking, hand washing, and TPHC record-keeping. PIC will also ensure risk factor compliance and maintain active managerial control at all times.

Inspector Notes: Observed employee change gloves in between changing tasks. Employee did not wash hands before dawning gloves. CA/COS: PIC and employees were educated on when to wash as well as how to wash. Employee washed hands before re-dawning gloves.

Inspector Notes: Observed employee eating on prep top cooler around facility food items. Also observed multiple employee drinks on prep counters, dry storage racks, and other unpermitted areas. CA/COS: PIC was advised to create a designated employee area for food and drinks. PIC discarded any potentially affected food.

Inspector Notes: Observed hand sink in the drive-through area with obstructed path and was unaccessible at time of inspection. Also, observed hand sink near 3-comp to have no plumbing. CA/COS: PIC advised someone is coming out Friday to fix the sink. Employee moved the trash can in the drive-through to create an easily accessible path to the hand sink and will ensure it remains this way

Inspector Notes: Fried chicken on the main hot holding unit was using TPHC. During temperature checks, the temperatures did not exceed 135F (as shown in the temperature log). An employee mentioned they are using TPHC and have been hot holding for the past hour and a half. CA/COS: PIC and employees were informed that if they are using TPHC, they need appropriate documentation. An employee created a chart for record-keeping and was informed that they have 2.5 hours before the food must be discarded.

Inspector Notes: Observed multiple employees with multiple bracelets on each arm. CA/COS: Items of jewelry such as rings, bracelets, and watches may collect soil and the construction of the jewelry may hinder routine cleaning. As a result, the jewelry may act as a reservoir of pathogenic organisms transmissible through food. (g) Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Employees removed jewelry.

Inspector Notes: Observed floor in main kitchen and walk-in cooler area to have excessive build-up of debris. RCA: PIC was advised to scrub the floors, mainly focusing on the coving of the walls and floors. b) Cleaning, Frequency and Restrictions. 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Inspector Notes: Observed mops stored in buckets or in a manner that does not allow them to completely air dry. CA: PIC will invert mops or hang them to ensure they can completely dry. PIC will also ensure employees retain this practice. (f) Drying Mops: After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
