Taiyo Ramen & Sushi in Lawrenceville receives a 62% on their recent health inspection

Taiyo Ramen & Sushi, located at 755 Lawrenceville-Suwanee Rd in Lawrenceville, received a score of 62 points out of a possible 100 points during their 12/03/2024 inspection by the Georgia Department of Public Health.

The violations noted by the inspector were:

Violation #1:
1-2A: .03(2)(a)-(l), (n)The person in charge is not demonstrating active managerial control multiple risk factors in violation. *** Second consecutive violation on a routine inspection.*** It is the responsibility of the person in charge to ensure compliance with the food code by demonstrating active managerial control within their facility. (Pf)

Violation #2:
3-1D: .04(5)(f)Observed raw red snapper being offered for sale with no parasite destruction letter from supplier. ***Second consecutive violation on a routine inspection.*** If the fish are frozen by a supplier, a written letter of parasite destruction from the supplier stipulating that the fish supplied are frozen to a temperature and for a time specified under subsection (5)(e) of this Rule may substitute for the records specified under paragraph 1 of this subsection. (Pf)

Violation #3:
6-1A: .04(6)(f)Observed multiple foods in prep cooler cold holding above 41F (see temperature log). ***Second consecutive violation on a routine inspection*** Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P)
Corrective Actions: Foods were discarded.

Violation #4:
6-2: .04(6)(g)Observed multiple time and temperature control for safety foods (house made marinade, hard boiled eggs, spicy mayo, chili mayo, spicy yellowtail, salmon skin) with no date mark. Refrigerated, ready-to-eat time/temperature control for safety foods prepared and held in a food establishment for more than 24-hours shall be clearly marked to indicate the date of prep or the date by with the food shall be used/discarded for a maximum of 7 days. The day of preparation shall be counted as Day 1. (Pf)
Corrective Actions: Person in charged labeled with the correct date.

Violation #5:
8-2B: .07(6)(c)Observed three bottles of chemical cleaner stored above metal pans, canned goods, and dry mushrooms. Observed lighters stored above stove, microwave, and pressure cooker. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles. (P)
Corrective Actions: Chemicals and lighters were relocated to an appropriate location.

Violation #6:
8-2B: .07(6)(e)Observed container of residential pesticide stored in facility. Poisonous or toxic materials shall be used according to: (i) Law; (ii) Manufacturer’s use directions included in labeling, and, for a pesticide, manufacturer’s label instructions that state that use is allowed in a food service establishment, (P) (iii) The conditions of certification, if certification is required, for use of the pest control materials. (P)
Corrective Actions: Pesticide was removed from facility.

Violation #7:
15C: .05(7)(a)2,3Non-food contact surfaces of equipment have soil accumulations (stove, fryers, burners etc..). Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. (C)

Violation #8:
17C: .07(5)(a),(b)1,2,3Floors underneath cooking equipment have soil accumulations. A machine used to vend food, except for canned beverages, shall be provided with overhead protection. (C)

Violation #9:
17D: .07(4)(b)Observed employee’s phone and jacket stored above dry goods. Observed employee food stored above avocado and cucumbers served to customers. Lockers or other suitable facilities shall be provided and used for the orderly storage of employees’ clothing and other possessions. (C)
Corrective Actions: Employee items and food were relocated to a designated area.

Note: Second consecutive violation of .03(2)(a)-(l), (n) – Responsibility of PIC on a routine inspection. A third consecutive violation will result in a permit SUSPENSION.
Note: Second consecutive violation of .04(6)(f) (Cold Holding) on a routine inspection. A third consecutive violation will result in a permit SUSPENSION.
Note: Second consecutive violation of .04(5)(f) (Parasite Destruction Records and Retention) on a routine inspection. A third consecutive violation will result in a permit SUSPENSION.
Note: All cold holding and hot holding temperatures in compliance unless otherwise specified.
Note: Wiping cloths used to sanitize food contact surfaces must be stored in a sanitizer solution between uses.
Note: Joint inspection with MRB.
Note: Follow-up inspection will be conducted within 10 days.
Note: A required additional routine will be conducted within 12 months.
