WNB Factory, located at 2463 Hamilton Mill Pkwy in Dacula, received a score of 61 points out of a possible 100 points during their 12/02/2024 inspection by the Georgia Department of Public Health.
The violations noted by the inspector were:
Violation #1:
1-2A: .03(2)(a)-(l), (n)Due to today’s unsatisfactory score and multiple critical risk factor violations, PIC has not demonstrated effective active managerial control It is the responsibility of the person in charge to ensure compliance with the food code by demonstrating active managerial control within their facility. (Pf)
Violation #2:
1-2A: .03(2)PIC (Person in Charge) not present at beginning of inspection. There must be a person in charge on the premises of the food service establishment at all times. (Pf)
Corrective Actions: PIC arrived onsite 1 hour later.
Violation #3:
2-1B: .03(5)(c)Observed food handler handle personal phone, don gloves, before prepping lettuce without washing his hands. Employees must wash hands and exposed portions of arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service articles, and: 1) after touching exposed body parts; 2) after using the restroom; 3) after coughing, sneezing, using tobacco, eating, or drinking; 4) after handling soiled equipment or utensils; 5) during food preparation, as often as needed to remove soil and contamination and to prevent cross contamination when changing tasks; 6) before putting on gloves; 7) after engaging in other activities that contaminate hands; 8) a second time when entering the kitchen from using the restroom. (P)
Corrective Actions: Food handler instructed to remove gloves, wash hands with soap, don new gloves, and discard contaminated lettuce.
Violation #4:
2-1C: .04(4)(a)1,2,3Observed same food handler bare hand contacting lettuce after washing his hands. Except when washing fruits and vegetables, food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. (P)
Corrective Actions: Food handler washed his hands with soap and donned new gloves. Contaminated lettuce discarded.
Violation #5:
4-1A: .04(4)(c)1(i)(ii)(iii)(v) (vi)(vii)(viii)Raw egg rolls inside reach in freezer stored above fries. Raw beef slices and burger patties stored above impossible patties and pineapples inside prep top cooler. Food shall be protected from cross contamination by: (i) Except as specified in paragraph (i)(III) of this subsection, separating raw animal foods during storage, preparation, holding, and display from: (I) Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, (P) and (II) Cooked ready-to-eat food; and (P) (III) Frozen, commercially processed and packaged raw animal food may be stored or displayed with or above frozen, commercially processed and packaged, ready-to-eat food. (ii) Except when combined as ingredients, separating types of raw animal foods from each other such as beef, fish, lamb, pork, and poultry during storage, preparation, holding, and display by: (I) Using separate equipment for each type, (P) or (II) Arranging each type of food in equipment so that cross contamination of one type with another is prevented, (P) and (III) Preparing each type of food at different times or in separate areas; (P) (iii) Cleaning and sanitizing equipment and utensils; (v) Cleaning hermetically sealed containers of food of visible soil before opening; (vi) Protecting food containers that are received packaged together in a case or overwrap from cuts when the case or overwrap is opened; (vii) Storing damaged, spoiled, or recalled food being held in the food service establishment separate from food, equipment, utensils, linens and single-service and single-use articles; or (viii) Separating fruits and vegetables, before they are washed from ready-to-eat food.
Corrective Actions: PIC relocated raw egg rolls below the fries, and relocated the impossible patties and pineapples into another section of the reach in cooler to prevent contamination.
Violation #6:
6-1D: .04(6)(i)Cooked wings stored on fry baskets. PIC informed inspector the wings are on TPHC (Time as Public Health Control). PIC could not produce time procedures and wings were missing start/discard times. When using Time Control (TPHC) for a maximum of 4 hours: 1) hot foods shall start at 135°F (57°C) or above and cold foods shall start at 41°F (5°C) or below; (P) 2) the food items shall be labeled with a start and discard time, not to exceed 4 hours; (Pf) 3) foods not consumed before the discard time shall be discarded; (P) 4) when combining ingredients, the start/discard time for the foods shall reflect the start/discard time of the earliest ingredient placed on time control; {P) 5) food in unmarked containers or packages, or marked to exceed a 4-hour limit shall be discarded; (P) 6) written procedures TPHC shall be created in advance and made available upon the Health Authorities request. (Pf)
Corrective Actions: PIC informed about how to use TPHC. Sample procedure emailed to PIC to be made available for the health authority. PIC wrote a start and end time for the wings inside basket.
Violation #7:
8-2B: .07(6)(f)Butane lighter stored above wing sauce buckets. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles. (P)
Corrective Actions: PIC relocated butane lighter to a shelf down and below food and food prep area.
Violation #8:
8-2B: .07(6)(l)Household use RAID pesticide observed stored under front handwashing sink. Call a Certified Pest Control Operator or use commercial use only pesticide. Restricted use pesticides specified under subsection (6)(e)3 of this Rule shall meet the requirements specified in 40 CFR 152 Subpart I. (P)
Corrective Actions: PIC removed RAID pesticide from facility.
Violation #9:
15A: .05(6)(a)Observed significant ice buildup inside (WIF) Walk in Freezer. Defrost unit to prevent ice dripping on food products. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. (C)
Violation #10:
17A: .06(5)(h)Woman’s restroom missing covered trash bin. Ensure cover is added by 12/12/24. A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. (C)
Violation #11:
17B: .06(5)(n)Side door and top lid missing from dumpster. Call Waste Management to replace dumpster unit. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered. (C)
Violation #12:
17B: .06(5)(o),(p)Dumpster missing drain plug. Call Waste Management to replace dumpster unit. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. (C)
Violation #13:
17C: .07(2)(a)Observed excessively dusty air vent above 3 compartment sink. Ensure air vent is cleaned and sanitized on a regular basis to prevent excessive buildup. All physical facilities shall be maintained in good repair and shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. (C)
Violation #14:
17D: .07(4)(b)Employee goods such as jackets, mouthwash, and other miscellaneous personal items stored on the same shelf and above various single service items such as burger wrapping paper, aluminum foil. Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur. (C)
Corrective Actions: PIC relocated personal employee items into a designated employee area down and below all single service utensils and products.

Note: All cold holding and hot holding temperatures are in compliance unless noted otherwise.
Note: Ensure handwashing signage is present inside Men’s Restroom.
Note: Ensure cardboard liners are removed. Surfaces must be easily cleaned and smooth.
Note: Remove all stickers from containers before washing and sanitizing.
Note: Replace damaged ceiling tile by dry storage and clean walls with grease accumulation.
Note: Ensure wrappings from veggies are removed and washed before prepping.
Note: An informal inspection will occur 12/12/24 to ensure 15A, 17A, 17B,17C are corrected. Failure to correct by given date may result in permit suspension.
Note: Due to today’s unsatisfactory score, a follow up inspection will occur within 10 days. Another required additional inspection will occur within 12 months.
